Angelica archangelica is a statuesque biennial producing a crown of foliage in its first year, then tall, fluted, fragrant stems topped with large globe-shaped umbels of greenish-yellow flowers in July. After flowering, ornamental seed heads form before the plant dies back in winter.
Historically used in folk medicine, perfumery, food and drink — the candied stems are a classic cake decoration, while the roots are a key botanical flavouring in gin, vermouth, bitters, Dubonnet and Bénédictine. With its wonderful architectural form, it makes a dramatic statement plant in the mixed border.
