This wonderful sea holly, Eryngium × olivierianum 'Jos Eijking', often known as 'Sapphire Blue', is a product of the cut flower trade and produces large, electric-blue thistle flowers in mid-summer.
It makes an excellent middle-of-the-border plant in any good, well-drained soil in full sun. Even when the flowers have finished, the remaining dry seedheads look very structural in the border. The plant forms good leaf clumps to around 30cm, with flowers held on strong stems that also turn electric blue, adding to the striking effect.
