Eryngium variifolium, commonly known as Variable-leaved Eryngo or Moroccan Sea Holly, is a distinctive evergreen perennial grown as much for its foliage as its flowers. The basal rosettes of glossy, dark green leaves are boldly marked with white veins, providing year-round interest at the front of a border. In summer, spiny silver bracts surround small cream thistle flowers on branching stems — a striking combination that is highly attractive to bees and other pollinators.
Once the flowers fade, the architectural seedheads persist well into winter, adding structure to the border long after other plants have died back. It thrives in well-drained soil in full sun or light shade and is well suited to gravel gardens and drought-tolerant planting schemes.
